I spotted this large bloom of fungi just off my neighborhood trail after a heavy rainstorm. I had never seen anything like them before.
A quick google search revealed that it is a large shelf mushroom known as Chicken of the Woods, which is actually used by some as a chicken substitute. Who knew?

This mushroom is delicious cooked in butter or even rolled in breadcrumbs and fried! We pick as much as we can when it comes up in the Blue Ridge.
