I love tracking down weird holidays, especially ones that celebrate food. From Pi Day to Wine Day, what better way to brighten up the work week then a celebratory treat? Next Tuesday is Peanut Butter Cookie Day, and I plan on making a batch of the easiest cookies to bake to commemorate the day. The basic recipe is all over the internet, but I like to make it my own by substituting the regular sugar for brown sugar and adding dash of cinnamon.
Peanut Butter Cookies:
10 oz. jar of peanut butter
1 cup of brown sugar
One half teaspoon of cinnamon
Preheat oven to 350 degrees. Mix ingredients and roll dough into one inch balls, placing them an inch apart on a non stick cookie sheet. Bake for ten minutes and allow to cool thoroughly
